Creamy Mushrooms on Toast

This recipe feels like a little treat, even though it’s made with humble ingredients. It’s the kind of thing you make on a slow morning, or when you want lunch to feel special without a lot of effort. The mushrooms get rich and silky, the toast soaks up all that goodness, and suddenly you’re wondering why you don’t eat mushrooms this way more often.

Ingredients List:

2 cups mushrooms, sliced

1 tbsp butter

¼ cup cream or dairy-free alternative

½ tsp thyme

Salt & pepper to taste

2 slices crusty bread, toasted

Melt butter in a pan over medium heat. Add chopped mushrooms to the pan and cook until the moisture is released and they start to brown.

Season with thyme, salt, and pepper. Once to the desired golden brown, stir in the cream. Make sure to keep stirring to ensure the cream does not burn.

Simmer until thick and luscious. Spoon over toasted bread and enjoy.
